Green and black peppercorns are mixed into the Flagship cheese resulting in a rich, savory cheese with buttery notes. is a special version, the wheels are bandaged in cheesecloth and open-aged to allow slightly lower moisture, focusing on the rich flavor with a long-finish. A winner of many awards including 1st place at the American Cheese Society in 2011, 2012, 2014. Serve it on a grilled burger or grate it into a baked potato. It pairs well with Merlot.
